For those that have been following me for a little while will know that my absolute favourite thing to eat is soup. And with the winter months upon us, I thought it would be the perfect time to start sharing some of my soup recipes!

This sweet potato and carrot soup is a favourite amongst my kids. It’s packed full of vegetables and is only mildly spiced, making it perfect for their sensitive tastebuds. And the addition of chickpeas makes this soup a great protein-packed vegetarian meal option.

 

Sweet Potato and Chickpea Soup

Serves: 4
Ingredients
  • 1 brown onion, roughly chopped
  • 3 garlic cloves, crushed
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander leaves
  • 1 – 2 teaspoons ground cumin (opt for less if your kids are a little fussy with spices)
  • 500g sweet potato, roughly chopped
  • 400g carrot, roughly chopped
  • 4 cups (1000g) water
  • 2 tablespoons vegetable stock paste/powder
  • 1 can chickpeas, drained and rinsed
  • Lemon, to serve
Method
  1. Heat the oil in a large pot over low heat. Add the chopped onion and garlic and cook for 3 minutes, or until translucent.
  2. Add the spices and cook for 1 minute, or until aromatic.
  3. Add the chopped sweet potato, carrot, water and vegetable stock paste/powder and bring to the boil. Turn the heat to low and cook for 25 minutes covered, or until the vegetables are tender.
  4. Add the chickpeas and cook for a further 10 minutes.
  5. Use a food processor or blender to blend the soup until silky smooth.
  6. Return the soup to the pot and reheat gently.
  7. Season to your liking and serve with a squeeze of lemon.

Method — Thermomix
  1. Place the onion and garlic into the Thermomix bowl and chop, 3 seconds/speed 5.
  2. Add the oil and sauté, 3 minutes/100 degrees/speed 1.
  3. Add the spices and cook, 1 minute/100 degrees/speed 1.
  4. Add the chopped sweet potato, carrot, water and vegetable stock paste/powder and cook, 25 minutes/100 degrees/speed 1.
  5. Add the chickpeas and cook, 10 minutes/100 degrees, speed 1.
  6. Blend the soup, 2 minutes/speed 9 or until silky smooth. (Make sure to slowly bring the speed up from 1 to 9.)
  7. Season to your liking and serve with a squeeze of lemon.
